Pesto Pizza

Well Catonsville Gourmet was closed yesterday – such a bummer, I really wanted a crabcake! I’m glad however that they decided to enjoy Easter Sunday and not work. So we went to Langermanns’ in Canton. I had the crispy sea bass which came with mushrooms, fingerling potatoes, arugula and a cream sauce – I never had sea bass before and it was very good.

I have been wanting the chicken pesto pizza I had from Vapianos pretty much all weekend.

So during my weekly trip to TJ’s I picked up some pesto, pizza dough, roasted red peppers and mushrooms ( I already had some mozz cheese at home). In addition to those ingredients I added some arugula to the pie too. This baked in a 425 degree oven for almost 20 minutes. What a great lunch!

For dinner I had a spinach salad with chicken

and for a little desert I picked up these gluten-free chocolate chip cookies. They are crunchy, buttery and sweet. The only ingredient difference was instead of regular flour they used rice flour. A serving is 2 cookies…and I only ate 2 cookies (yay me:) AND I worked out for 50 minutes…I will tell you about the workout tommorow.

Happy Resurrection Sunday

I just finishing watching Joel Osteen’s live service and the message today was ‘God loves imperfect people” and I am sooooooooo glad!

“Blessed be the God and Father of our Lord Jesus Christ! According to his great mercy, he has caused us to be born again to a living hope through the resurrection of Jesus Christ from the dead, to an inheritance that is imperishable, undefiled, and unfading, kept in heaven for you, who by God’s power are being guarded through faith for a salvation ready to be revealed in the last time..” 1 Peter 1:3-5.

I had an interesting birthday last weekend and cooked myself a birthday dinner…On the menu was Roasted Chicken, Maple Mustard Potatoes and Green Beans, Corn Casserole, Deviled Eggs, Garden Salad, Baked Tilapia, and Mango Black Tea…it was delicious.


My lovely coworker friends and I went to happy hour/dinner on Friday to continue my birthday celebrating at Vapianos in Chinatown, DC. I had the chicken pesto pizza, along with some sangrias and a lemon drop shot – all very yum delicious. Afterwards we walked to Red Velvet cupcakery and I got a red velvet cupcake.

After a week of feeling discouraged, it was nice to get out and have a good time. I am going to try a new restaurant today called Catonsville Gourmet – but I could honestly eat that chicken pesto pizza again lol! I hope everyone has a great week.

Oatmeal Cherry Cookies

I love cherries but they can be pretty pricey so I hardly get them. As I was browsing Trader Joes’s last weekend I came across some dried bing cherries and I immediately put them in my cart with no idea what I was going to do with them. I wanted something sweet so why not make some cookies (since I love them so). These cookies are not overly sweet and the cherries give it an extra bit of ‘chewiness’ that a raisin just doesn’t give. Let me know what you think!


Oatmeal Cherry Cookies

3 cups old-fashioned oats

1 cup unbleached all-purpose flour

1 cup brown sugar

1/2 cup sugar

1 1/2 stick unsalted butter

1 egg

1/2 cup applesauce

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1 tsp vanilla

1 package dried bing cherries (I used the ones from Trader Joes)

Preheat oven to 350 degrees. Cream the butter and sugars together for 3 minutes. Add the egg, applesauce and vanilla until combined. Add the remaining ingredients leaving the cherries for last.

Using my large (3 tsp) cookie scoop I baked these for 15 minutes on a lined cookie sheet. Let them cool for about 15 minutes before serving.

Yesterday my little Taz went to Doggy Heaven…although I miss him I am so glad he is not suffering anymore.


My coworkers had cake, fruit, a card and decor which helped me to take my mind off my loss. This morning I woke up with the intent to do Ms. Jeanette Jenkins bootcamp dvd but with little sleep and little energy I didn’t make it very far into the workout. So I decided to make myself a birthday cake. Last night I went to Sams Club and saw these..

I made a lemon pound cake with strawberry icing…

I probably shouldn’t have started the day with cake but I had to taste it lol. I am not really a cake person so I doubt I will eat any more of it. Now I am getting ready to go to brunch and whatever else the day brings:) Have a great day….

Avocado Poundcake

I know what you are thinking…avocado poundcake? Yup that’s right!

I purchased a new loaf pan today and had to try it out. I saw this recipe for chocolate avocado poundcake through and thought it sounded interesting. I am not big on chocolate (unless it’s a chocolate chip cookie) so I changed the recipe a bit.

A lot of people do not like avocados simply because they are green. I love them – not only are they loaded with vitamins, omega 3’s (the good fat), protein, and also have anti-inflammatory benefits. They are great alone or on salads, sandwiches, and of course in guacamole!

This cake isn’t as sweet as I thought it may be but it is definitely moist.  It seems like a great cake for toppings such as powdered sugar, some strawberries and greek yogurt or ice cream. Yum!





Avocado Poundcake

1  1/2 cups unbleached all-purpose flour

1/4 cup cornmeal (I used oats instead and think it would be fine to omit)

1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

6 tbsp unsalted butter (softened)1  1/2 cups sugar

2 eggs

1 whole ripe avocado

1 tbsp pure vanilla extract

1/3 cup buttermilk ( I used soy milk)

Preheat oven to 350 degrees. Spray a 9 inch loaf pan with cooking spray. In a bowl whisk together the dry ingredients (flour, oats, baking soda, baking powder, salt).

Using a mixer, beat the butter and sugar together on high until light and fluffy. Add the avocado and beat for 2 more minutes. Scrape down the sides of the bowl and add the eggs. Beat for 2 more minutes.

Add half of the dry ingredient mixture to the bowl. Mix until just combined. Add the milk and the remainder of the ingredients. Mix on low until just combined (do not over mix).

Pour the mixture into the sprayed loaf pan, smoothing the top. Bake for 50- 60 minutes or until a knife or toothpick inserted in the middle comes out clean. Let cool for at least 15 minutes before attempting to remove the cake. It is best to let the cake cool before cutting.


Honey Sesame Chicken

I really like the boneless, skinless chicken breasts from Trader Joes. They aren’t plumped up with Lord knows what and actually taste like chicken. Some of you maybe thinking huh? How can a chicken not taste like chicken? Trust me it can. Try purchasing some major brand name (I would say the name but I digress) chicken nuggets and making your own with fresh chicken that actually lived on a farm, ate grass instead of antibiotics, could breath fresh air and so on… yeah its quite a difference.

What I liked about this recipe was that the sauce is homemade and so easy. It reminds me of my Hawaiian Pulled Chicken (I will share that recipe soon).

Honey Sesame Chicken (crock pot recipe)

3 – 4 boneless skinless chicken breast

salt and pepper

3/4 cup agave nectar (or honey)

1/4 cup low sodium soy sauce

1/2 cup diced onion

1/4 cup ketchup

2 tbsp canola oil

1 tsp minced garlic (about two cloves)

1/4 tsp red pepper flakes

4 tsp cornstarch dissolved in 6 tbsp water

sesame seeds

Combine agave, soy sauce, onion, ketchup, oil, garlic, and red pepper flakes into a bowl. Stir well. (I added 1/4 tsp of ginger also)

Salt and pepper both sides of the chicken. I cut the three chicken breasts into 12 pieces.

Place the seasoned chicken into the bottom of the pot and pour the sauce mixture on top. Cook for 3-4 hours on low or 1 1/2 to 2 1/2 hours on high. You do not want to over cook the chicken.

After 3 1/2 hours on low I removed the chicken to a separate plate and shredded the chicken with a fork.

In the pot add the cornstarch mixture to the pot and stir. Allow the sauce to thicken, 5 minutes or so and return the chicken to the pot.

I served this over brown rice…don’t forget to top with your sesame seeds! Yum:)

Bikini Boot Camp

If you do not know who Jeanette Jenkins is, she is the Hollywood Trainer who works with celebrities such as Paula Patton, Tia Mowry, Kelly Rowland, Pink and the list goes on. You can check out her website here

I am a workout dvd junkie but lately I have been at a plateau and was searching for a dvd that would really work-me-out! So ok…wooo I am out of breath just thinking about the first time I tried this dvd. After a few days of being under the weather I was determined to work out – seriously -I was huffing and puffing after 20 minutes…dripping in sweat…I told myself that it must have been that I took a few days off from working out. Who I am kidding! This workout is no joke.

The great thing about this dvd is that it is broken down into sections – so if you are short on time or like to switch your routine up – there are lots of options. The dvd is 75 minutes in total.

Warm-up 5 minutes
Cardio Camp 28 minutes
Chisel Camp 25 minutes
Ab Camp 9 minutes
Stretch Camp 8 minutes

1st try – Warm up, 1/2 of Cardio Camp, and Stretch

2nd try – Warm up, Cardio Camp (all of it, yay!) and Stretch

3rd try – I haven’t gotten here yet! I just got the dvd ya’ll!

I have two other of Ms. Jenkins dvds but I think I will stick with this one for a few weeks and see if my plateau lifts.  Pray for me:)
